Heart-warming cycling food: Vegan chilli, sweet potato and carrot soup

This soup is a real winter warmer after a cold cycle ride.

Now the colder weather is here, we’ve got this popular soup recipe from an award-winning cyclist café.

Eureka Café in Chester received our ‘Lifetime Achievement Award’ for their excellent services to cyclists since for over 80 years.

The recipe they are sharing is their delicious, warming homemade soup. 

Over the cooler months this is one of their most popular recipes and is super simple to make at home.

Ingredients 

2 red onions finely chopped

2 kg of peeled and chopped carrots

5 large peeled sweet potato and chopped 

2 teaspoons of garlic powder (or use 3 cloves of fresh garlic)

4 litres of vegetable stock (can use gluten free stock if needed)

Season with salt and pepper

A pinch of chilli flakes 
 

Method 

  1. Put chopped onions and garlic into a large pan with vegetable oil and saute.
  2. When onion is soft add the chopped carrot and sweet potato give it a few minutes stirring all the time.
  3. Add the vegetable stock.
  4. Bring to the boil. 
  5. Add black pepper and salt to taste
  6. Simmer until vegetables are soft (approx 20 minutes)
  7. Blend in a food processor or use a stick blender until smooth.
  8. Sprinkle chilli flakes on top

Serve hot with nice crusty bread.

All I can say is that the cafe must have enormous pots and the customers are very hungry as this recipe makes about 11 pints.
